SHRIMP SCAMPI

This is a super easy meal that can be prepared in less than 20 minutes.

1/4 lb margarine or butter at room temperature

1 Tbsp minced garlic OR 1 large clove of garlic, minced

2 Tbsp lemon juice

1 lb raw shrimp, peeled & deveined

1 tsp parsley flakes

paprika

1/2 large onion, diced


Place margarine (or butter), lemon juice, garlic & onion in deep casserole which is microwave safe.

Cover & microwave at medium-high (70%) until butter is melted & garlic & onion begin to soften: 4 - 5 minutes.

Add shrimp & gently stir to coat.

COVER with vented plastic wrap or casserole lid.

Microwave at medium-high (70% power) for 1 minute at a time, stirring between cycles.

Repeat until shrimp are pink, approximately 4 cycles.

Sprinkle with parsley & paprika.

NOTE: You can also add cajun spice when you melt the butter in step 1.

Serve over rice or pasta.

French bread is wonderful with this.
