SCALLOPED POTATOES


1 lb potatoes, thinly sliced OR 1 lb frozen hash browns

1/2 stick unsalted butter, broken into small pieces

1/2 c chopped onion

4 oz. shredded cheddar cheese

1/2 c diced ham (optional)

black pepper to taste

1 can condensed cream of chicken soup (or any other creamed soup you prefer)

8 oz. sour cream (we use the low fat)

Grease a 9" x 9" baking/casserole dish

Combine the first 6 ingredients in a large bowl.

In a separate bowl combine the soup & sour cream.

Pour the potato mixture into your prepared baking dish & add the soup & sour cream mixture.

OVEN: 350º

BAKE: 90 minutes - stir the mixture after 45 minutes

YIELD: 4 servings
