POTATO PANCAKES


2 c grated raw potatoes (measure after draining)

2 beaten eggs

1 tsp salt

1 Tbsp flour or matzoh meal

pepper to taste

1/4 tsp baking powder

1 grated onion

oil to cover bottom of frying pan


Combine all ingredients, except oil. Mix well.

Put oil in skillet.

Drop mixture by tablespoonful into hot skillet. Press gently with spatula.

Fry on both sides until browned.

Serve with sour cream or applesauce.
