LASAGNA ROLLS

1 lb ground meat

1 egg, lightly beaten

1/4 c grated Parmesan cheese

8 lasagna noodles

1 small jar thick style tomato sauce

1 c chopped mushrooms (optional)

1/2 medium onion, chopped

garlic to taste

salt & pepper to taste

6 oz shredded Mozzarella cheese

additional Parmesan cheese (for topping)

Cook noodles according to package directions.

In a separate pan cook the ground beef with salt & pepper. Drain the liquid from the meat & add the mushroooms, onion & garlic. Sautee for approx. 3 - 4 minutes & remove from heat.

Combine meat mixture with egg, mozzarella & parmesan. Mix thoroughly.

Drain noodles, leaving some moisture.

Lay moist noodles on a baking dish or aluminum foil in a "+" shape.

You will have 4 "+" shapes.

Put an equal amount of the meat mixture in the center of each "+".

Bring the bottom noodle up & over the meat mixture, then do the same with the top noodle, forming a packet.

Coat the top & sides of each lasagna roll with sauce & additional Parmesan cheese.

OVEN: 325º

BAKE: 10 - 15 minutes
