CHICKEN WITH LEMON SAUCE

2 Tbsp cooking oil

2 cloves garlic, minced

2 scallions, chopped

4 chicken cutlets, pounded to approx. 1/2" thickness

1 lemon, thinly sliced

Lemon Sauce:

1/4 c lemon juice

2 Tbsp sugar

Combine sauce ingredients in a saucepan & keep hot.

Put oil into a hot wok or medium hot frying pan. Swirl & add garlic & scallions. Stir for 20 seconds. Remove with slotted spoon & set aside.

Place 2 chicken cutlets in the pan & cook 5 minutes on each side, adding more oil if needed. Remove & transfer to a heated platter. Repeat with remaining 2 cutlets.

Sprinkle garlic & scallion mixture over chicken. Arrange lemon slices on top. Sprinkle with sauce & serve.
