MUFFINS: TUNNEL OF CHEESE

2 c biscuit baking mix

8 slices of bacon, crisp-cooked & crumbled

3/4 c milk

1 egg, beaten

12 (1/2") cubes Swiss cheese

OVEN: 400º

Combine biscuit mix & bacon in medium bowl.

Add milk & egg, stirring just until moistened.

Spoon 1/2 of the batter into 12 buttered muffin cups.

Press 1 cheese cube into each muffin cup.

Top with remaining batter, covering cheese completely.

BAKE: 25 minutes or until golden.

Remove from pan and serve hot.
