RUSS' FAVORITE COOKIES

quick, easy & taste terrific

l c unsalted butter, room temperature

1 1/4 c sugar

1 large egg

2 3/4 c flour

1/2 tsp baking soda

1/4 tsp salt (if using salted butter, delete salt)

In a large bowl beat butter & sugar until light and fluffy. Beat in egg.

In another bowl combine flour, baking soda & salt; mix well.

In two batches, add flour mixture to butter/sugar mixture. Mix just until blended.

Divide dough in half. Shape each half into a 12" long cylinder. At this point you may roll the cylinders in sprinkles or a mixture of cinnamon & sugar.

Wrap each cylinder in either wax paper or plastic wrap; freeze 15 minutes. If freezing longer than 1 hour use an outside wrapping of foil.

OVEN: 350º

Slice dough into 1/4" thick rounds; place on ungreased cookie sheets.

BAKE: 11 - 12 minutes or until set

Cool slightly on baking sheets; remove to racks to cool thoroughly.

YIELD: 7 dozen
