POPOVERS: Dessert

2 eggs

1 c milk

2 Tbsp butter or margarine, melted

1 tsp vanilla extract

1 c all-purpose flour

2 Tbsp granulated sugar

3/4 tsp ground cinnamon

1/4 tsp salt

Confectioner's sugar (optional)

Position rack in lower third of oven.

Pre-heat oven to 375º

Grease 6 (6 oz) custard cups. Set custard cups on a baking sheet for easier handling.

Beat eggs in a large bowl at low speed for 1 minute.

Beat in milk, melted butter & vanilla until blended.

Beat in flour, granulated sugar, cinnamon & salt until batter is smooth.

Pour evenly into prepared custard cups.

BAKE: 40 minutes

Quickly make a small slit on top of each popover to let out the steam.

BAKE: 5 to 10 minutes longer, or until lightly browned.

Remove popovers from cups. Sprinkle with confectioner's sugar, if desired.

Serve warm.
