MUFFINS: OATMEAL
1 c quick-cooking oats
1 c milk
1 c flour
1/3 c sugar
3 tsp baking powder
1/2 tsp salt
1 well beaten egg
1/4 c oil
Combine oats & milk; let stand 15 minutes.
Place flour, sugar, baking powder & salt in bowl. Mix well.
In a separate bowl combine egg, oil & oatmeal
mixture. Add ALL AT ONCE to dry ingredients.
Stir just to moisten.
Fill greased muffin cups 2/3 full.
OVEN: 425º
BAKE: 20 - 25 minutes
YIELD: approx. 10 muffins
