CHEDDAR PEPPER MUFFINS

2 c flour

2 tsp sugar

1 Tbsp baking powder

1 tsp coarsely ground black pepper

1/2 tsp salt

1 1/4 c milk

1/4 c vegetable oil

1 egg

l c (4 oz) shredded sharp Cheddar cheese, DIVIDED

preheat oven to 400º

generously grease 12 muffin cups

Do NOT use paper cupcake liners. The muffins will stick to the paper.

Combine flour, sugar, baking powder, pepper & salt in large bowl.

Combine milk, oil & egg in small bowl until blended.

Stir the liquids into the flour mixture just until moistened.

Fold in 3/4 c of the cheddar cheese.

Spoon evenly into prepared muffin cups.

Sprinkle remaining 1/4 c cheese over tops of muffins.

OVEN: 400º

BAKE: 20 minutes or until light golden brown. Let cool in pan on wire rack 5 minutes. Remove from pan & serve warm.

YIELD: 12 muffins
