1 box Jiffy corn muffin mix
1/4 tsp baking powder
1 egg
approx. 8 oz can creamed corn
Stir corn muffin mix & baking powder.
Add egg & corn.
Mix until blended, but do NOT overmix.
You may add 1 heaping Tbsp sour cream if desired.
Grease muffin tins or an 8" pie plate.
Place mixture in muffin tins - 2/3 full or pie plate.
OVEN: 400º
BAKE: 20 minutes - do NOT overbake
YIELD: 6 - 8 muffins or 1 - 8" pie
