COFFEE CAKE & VARIATIONS

3/4 c sugar

1/4 c soft shortening

1 egg

1/2 c milk

1 1/2 c flour

2 tsp baking powder

1/2 tsp salt

OVEN: 375º

Grease & flour 9x9x1 3/4" square pan.

Mix sugar, shortening & egg thoroughly.

Stir in milk.

Blend dry ingredients in a separate bowl & stir into wet ingredients.

Spread batter in pan.

Sprinkle with desired topping (see below).

OVEN: 375º

BAKE: 25 - 35 minutes or until toothpick inserted into center comes out clean.

Serve warm.

Cinnamon Coffee Cake:

Sprinkle top with a mixture of 1/2 c brown sugar (packed) & 1 1/2 tsp cinnamon

Streusel-filled:

Spread only half the batter in pan. Sprinkle with half the streusel mixture (see below). Add the remaining batter & sprinkle remaining streusel over top.

Streusel Mixture:

Mix 1/2 c packed brown sugar, 2 Tbsp flour, 2 tsp cinnamon, 2 Tbsp melted butter & 1/2 c chopped nuts. Chocolate chips may also be used.
