BISCUITS: FLAKY

2 c flour

1 Tbsp baking powder

1/2 tsp salt

1/4 c chilled vegetable shortening

1/4 c butter

3/4 c cold milk

OVEN: 425º

In a large bowl combine flour, baking powder & salt.

With a pastry blender or 2 knives cut in shortening & butter until mixture resembles coarse crumbs (can be done on slow speed of electric mixer).

Stir in milk just until dough holds together.

On a lightly floured board knead gently about 1 minute.

Pat dough to 1/2" thickness.

Using a floured biscuit cutter cut dough into 2 1/2" to 3" rounds.

Place 1" apart on ungreased cookie sheet.

OVEN: 425º

BAKE: 12 - 15 minutes or until lightly browned.

Serve hot.

YIELD: 10 biscuits
